Julian was born in the Quechua community of Queros, the last uncontacted outpost of the Quechua Nation. History has it that when the Spanish Conquistadores began to proliferate through the Peruvian Andes the Queros community retreated deeper into the mountains and continued to exist undisturbed living their traditional way. Julian’s story is unique in that he was shipped off to work in Lima at the age of 12. He found himself in a foreign place, with a foreign Language, completely removed from his family. He worked in Lima until he was 18 when he had finally gathered enough money to travel back to Cusco to reunite with his family.

Now Julian is a chef, specializing in gourmet, organic, healthy cooking as well as traditional Peruvian cuisine with local Andean produce. He is in high demand in the Cusco region amongst people who organize different types of wellness retreats.

Healthy, invigorating and creative food is Julian’s passion and it really is felt when you eat his dishes. But it is his warm and genuine personality that is such a pleasure to be with when you spend time in the kitchen. Julian embodies many of the beautiful qualities typical of the Quechua people. Julian’s cooking classes in Cusco are a great way of getting back in the kitchen if you feel you want to be re-inspired. He can teach you local Andean, Criollo and Peruvian coastal cooking including the famous Peruvian Ceviche.

We can organize private cooking classes with Julian in the comfort of your holiday home in Cusco or the Sacred Valley. You can also join Julian for a tour of the local food market nearest you before the cooking class. It’s an eye-opening experience to explore the crazy Peruvian markets with a local chef who knows every nook and cranny, what’s in season, what’s organic, and where it comes from.

The market tour will take ~1hr + travel time, which will depend on how far you are from the market:

  • If you are in the Sacred Valley you will visit the Urubamba market.
  • If you are in Cusco you will visit the San Pedro market.

If you prefer, or if you do not have the time to visit the market, Julian can also arrive with the shopping already done.
